It’s officially summer—HOORAY!—which means the fruits stands are stocked with all the most delicious goodies. Grapes, apricots, watermelons, cherries, strawberries, and more! How can you resist? Seriously though every time we pass a stand, we’re picking up another basket of something good.
Fresh fruit is an excellent source of dietary fiber as well as great source of potassium, folate, and vitamin C (depending on which fruit you eat). It’s an important component of a healthy diet and a rather tasty one if I do say so myself. :)
For me breakfast is my favorite meal, but it is also the one I find most challenging for deciding what to eat. Partially because I am just waking up and partially because I’m trying to figure out what my body is craving that particular day. Is it savory? Is it sweet? Is it quick? Do I have time? Well whatever I am feeling, toast is always a pretty standard winning item for brekky.
Now everybody is on the avocado toast train, and admittedly it’s one of my favorites as well, but for a colorful, fresh summer ready alternative it’s time to hop aboard the strawberry toast train! A little sweet, a little tangy followed by the hearty crunch of the toast. Mmm!
Bonus—It’s crazy simple to make. You can even prep the strawberries the night before, just let them rest in the fridge overnight.
GLUTEN-FREE, VEGAN STRAWBERRIES & CREAM CHEESE TOAST
Ingredients
- 1 cup fresh strawberries, leaves removed and quartered or thinly sliced
- 1 tbsp granulated sugar
- 2 slices of bread of your choice, thickly sliced (if you’re going gluten-free, vegan with this recipe make sure the bread you choose is compliant)
- 1-2 tbsp Tofutti cream cheese (depending on how much cream cheese you like and the size of the bread slices)
- Several fresh mint leaves, chopped
Directions
- Wash and prep the strawberries.
- Toss in small bowl with sugar and allow to sit with 15 minutes.
- Place bread slices in toaster and toast until preferred doneness, preferably golden brown.
- Spread the cream cheese on top of each toast slice.
- Divide the strawberries and spoon atop the two slices.
- Sprinkle with the mint.
- Enjoy!
