The perfect summer day calls for a perfect summer dish and for me no other fruit epitomizes summer more than watermelon. It’s always been a family favorite. When they’re in season, there is always at least one chopped up in our fridge.
Now I know watermelon is a member of the cucumber family and therefore is technically a vegetable, but because of it’s sweetness I’ve always used it more like a fruit in recipes. Either way, doesn’t matter because whatever it is, it was made for summer and summer weather.
It’s juicy, cool, and refreshing! Plus did you know that watermelons are 92% water? It’s fantastic chopped up as an afternoon treat, tossed in a salad, or even frozen in freezer pop molds.
But for me, the best combination is putting the sweetness of the watermelon to bat against something acidic and salty—thus watermelon feta salad! Try it and let me know what you think. :)

GLUTEN-FREE WATERMELON, TOMATO & FETA SALAD
Ingredients
- 1 large watermelon, chilled, cubed, and drained
- 2 large tomatoes, chopped
- 1 tbsp rice vinegar
- 3/4 red onion, chopped
- 4 oz goat feta cheese, crumbled
- 1 cup fresh mint leaves, roughly chopped
- Salt & pepper, to taste
Directions
- In a large bowl, gently toss all ingredients until well mixed.
- Serve immediately.
