For real guys, today is National Margarita Day! Did you know such a holiday existed? I do know and that’s all that matters. Even though I’m not a big drinker, I will take any excuse to enjoy some Mexican food.
Pico de gallo is something my boyfriend and I make frequently. It’s so simple and tastes so fresh that we will eat it on anything. It’s the perfect topper on countless Mexican specialities, the perfect addition to any burrito or quesadilla or the perfect appetizer if you double the recipe and serve with chips, crackers or crostini. Muy bien!
GLUTEN-FREE, VEGAN PICO DE GALLO
Ingredients
- 3 tomatoes, diced
- 1-2 jalapeño peppers, deseeded and diced
- 1/2 large onion, diced
- 1 cloves garlic
- 2 tbsp fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper, to taste
Directions
- In medium bowl, mix all ingredients until well combined. Transfer to serving bowl and serve!
