Around April it felt like 2020 might drag on forever but somehow it is already November…No complaints here, but it’s crazy to think that in just a few weeks we will be meeting our sweet little baby. Ahhh can’t wait!
LeBraun and I are trying to soak up this special time. It’s been the two of us—#shabraun—for more than 15 years now and although we are over the moon about Sponge we don’t want to lose who we are or our relationship in our new roles. Unfortunately 2020 has robbed us of much of this time—not traveling, not seeing friends and family, not doing things or going places, not even being in our own house but we are grateful for being able to slow down. We’ve been catching up on tv shows and movies, working on some passion projects, and learning some new things.
Fortunately Autumn still feels like Autumn and our pantry is stocked with apples from orchards all around B.C. and since you can never have too many fruit-based desserts here another SUPER easy one—Apple Cake!
You can’t mess it up AND it requires minimal prep.
Not GF/V? If you’re not gluten-free or vegan, both or neither then just use the gluten-full (is that a thing?) and non-vegan versions of the ingredients like traditional butter and a standard yellow cake mix. In this case serve with traditional ice cream as well. Either way, happy baking!
Note: For the Americans following along, it would be an excellent addition to your Thanksgiving meal in the few weeks.
Easiest Gluten-Free, Vegan Apple Cake
Ingredients
- 5-6 apples, peeled and thinly sliced
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup chopped nuts of choice (optional, but pecans are my fave!)
- 1 (425g) box of GF/V yellow cake mix, dry
- 3/4 cup vegan butter alternative, cubed small
Other
- Vanilla ice cream for serving (I love So Delicious cashew vanilla—YUM!)
Directions
- Preheat oven to 350 degrees Fahrenheit.
- Toss apples, sugars, vanilla, cinnamon, salt, and optional nuts together in a large mixing bowl.
- Spread the apple mixture into a 9x13-inch baking dish.
- Pour the dry box cake mix over the apple layer. Do not make the mix into a batter.
- Place the butter cubes over the dry mix layer.
- Bake 50-60 minutes until apples are tender and topping is golden.
- Best served while still warm with a scoop of vanilla ice cream
