You know in Mean Girls when Cady Heron can’t stop talking about Regina George and the words just keep coming up like “word vomit?” Well that is what has happened to my husband since Fortnight was released.
If he’s not playing Fortnight, he is watching a stream. If he is not watching a stream, he is talking about Fortnight with his friends. And most commonly he is doing all three, at the same time. Funny since he can’t multitask anything else…hmm!
When we go out to dinner with friends I secretly guess how long it will take for him to bring up something Fortnight related. Seriously y’all, what are we going to do?!
There have been some benefits to Fortnight. He has reconnected with some old friends. He uses it to decompress after a long day of work. He completes his chores quicker knowing that he can play Fortnight after.
But as with everything, moderation is key!
It’s because of this that I now know September 12 is National Video Game Day. And any holidays calls for cake, right?
Well this one is the easiest recipe ever—yellow Space Cake!
Growing up we always called this recipe “Space Cake” because each slice is light and airy. Obviously nowadays Space Cakes are the more common term for cakes made with cannabis. Please note that this recipe does not contain any marijuana or derivatives.
Though either way I’m sure it could satisfy some those munchies! :)
Each bite is like eating the fluffiest, most softest cloud. But it’s a cake. A cake come from space to do a heavenly dance on our taste buds.
The cinnamon-sugar sprinkled on top just puts it over the top. Drooling

Gluten-Free, Dairy-Free Space Cakes
Ingredients
For Base:
- 1 gluten-free, dairy-free yellow cake mix (like Betty Crocker™ Gluten Free Yellow Cake Mix)
- 1 pkg gluten-free, dairy-free instant lemon pudding (like European Gourmet Bakery Organics Lemon Pudding Mix)
- 5 eggs
- 2/3 cup alternative milk of choice (I used almond milk)
- 3/4 cup oil
For Topping:
- 1/4 cup granulated sugar
- 1 tbsp ground cinnamon
- 2 tbsp butter substitute, melted
Directions
- Preheat oven to 325 degrees Fahrenheit.
- Line 18x13-inch baking sheet with parchment paper extending slightly larger than the pan.
- In large bowl, mix all base ingredients together until well combined and smooth.
- Pour batter onto prepared baking sheet.
- Bake for 20 minutes or until golden brown and toothpick inserted into center comes out clean.
- In small bowl, toss sugar and cinnamon together until well mixed.
- Spread melted butter substitute across the top of the cake and immediately sprinkle liberally with cinnamon sugar.
- Slice into squares and serve.
